I like to watch other players before I play them a few times. I get a general sense of their playing style fairly early on. If I watch long enough though I can often pick up on some quirk or something that gives them away. At that point look out. I pay close attention to them for several hands and keep my bets low.  Once I have a handle on their reactions, then I up the ante a bit.
